- 1 pound pasta (penne, rigatoni, etc.)
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 cup mushrooms, sliced
- 2 tablespoons gochujang (Korean chili paste)
- 1 cup vegetable broth
- 1/2 cup heavy cream (or plant-based cream)
- 1/4 cup grated Parmesan cheese (or nutritional yeast)
- Fresh spinach, a few handfuls
- Sesame seeds and green onions for garnish.
- Cook pasta according to package directions.
- Sauté onion, garlic, bell pepper, and mushrooms in olive oil until softened.
- Stir in gochujang and cook for 1 minute.
- Add vegetable broth and cream, and simmer until slightly thickened.
- Stir in Parmesan cheese (or nutritional yeast) and spinach.
- Add cooked pasta to the sauce and toss to combine.
- Garnish with sesame seeds and green onions.
